Clive you are just soo right, I too have my favourites, but I do include a couple of knives, and peelers. but as with all things start with the basics and build.

That's right :) . The more tools you use, the more tools get dirty. Thus, you waste more energy on cleaning it and the life gets more complicated :-S .
